Grilled Kielbasa with Warm Potato SaladScott Koeneman - Fight the Fat Foodie This version of a dish I found on Epicurious has a a reduced serving size and reduced fat. What the original recipe called 4 servings was close to 6 or 8. To lighten it further, I used a turkey version of the kielbasa and a little less olive oil in the warm potato salad. The recipe on my Spring pad is the reduced version, but it also contains a link to the original. This recipe is a real keeper, flavorful and satisfying.
I served it with a wonderful and light Cabbage and Apple Slaw that is made with non-fat Greek yogurt and light sour cream, instead of mayo. This recipe is becoming a family staple.
