Quick Pita Pizza

Scott Koeneman - Fight the Fat Foodie

Sometimes, you're just in a hurry. Everybody has days likes these, that's why it's important to keep a stocked pantry. The last thing you want is to come home, realized you don't have anything you want or can cook followed by a trip to the nearest burger palace. This is one of my favorites, but you can find a list of pantry items and 13 quick meals at Weight Watchers No Time to Cook Guide.

You can make these with whatever you have around or like. I toast the pitas in the oven at 350F for about 10 minutes then top with a tomato bruschetta topping, a tablespoon of Parmesan, 1/2 ounce crumbled goat cheese, thin sliced tomato, chopped red onion, sliced mushroom, and shredded part-skim mozzarella. The nutrition information will vary depending on what you use, but keep the ingredients healthy and the dish will be healthy.

Let's eat!
