Homemade Mexican Rice

1/2 cup of tomato puree
4 cups of rice
8 cups of water
3 tbsp. of granulated garlic
1 cup of chicken base
1 tbsp salt
1 pound butter
1/2 cup vegetable mix
1/2 cup onion, peppers, tomato mixture
In a pot melt the butter.
Add the rice toasted and heat for two minutes.
Add the vegetables and cook for one minute.
Combine water with tomato puree, salt, garlic, chicken base, and rice then bring to a boil.
Reduce heat and let simmer for ten minutes until all the water has evaporated.
Turn heat off, and cover rice.
Let rice stand for ten minutes.
