Tacos al Pastor

1lb pork loin
1/2 cup vinegar
2 tbsp oil
3 chiles guajillo
3 chiles ancho
1 small tomato
1 chopped onion
3 cloves of garlic
1 tsp. cumin
salt to taste
Cut the pork in cubes or small pieces.
Add vinegar and let stand for five minutes.
In a pan, boil the peppers, tomatoes, garlic, and 1/2 onion for five minutes.
Blend all the the boiled ingredients, adding the cumin until you get a smooth texture.
In a pan, add the oil and the rest of the onion and the sauce and simmer for five minutes.
Let sauce cool down before adding the pork.
