Tex-Czech Smothered Sausage

5-6 red or golden potatoes
1 sweet onion
Mikeska Brands Pork Sausage
1/2 cup of butter

5-6 red, or golden new potatoes cut in 1/4ths,boil until soft and then drain in colander.  Place in small pan.

Chop or punch ringed onions  about 1/3 or 1/4th of an onion.

In a sauté pan, place the onions, and about 1/2 cup of butter and slowly sauté the onions until done and light brown.

Pour the onions and butter over the cooked, drained potatoes.

Take a Mikeska Brands Pork Sausage and place on a cookie sheet.  Heat in oven at 275 for 20 minutes or until casing is tight and hot.  You can also grill the link until done, careful not to overheat the link and wrinkle the casing.  As soon as the casing is tight, it’s done.

You can then carefully score the link with a sharp knife on each side and all the way down the casing, this helps the eating and reduces the snap effect.
Place the heated link onto a plate or onto a bun, then pour the pan of potatoes/onions over. You can then add seasoning as desired.
