Carolina BBQ Burger

Carolina BBQ Burger
•    2 lb ground beef, formed into 6 - 1/3 lb patties
•    6 hamburger buns (Kaisers or brioche work great)
•    6 slices cheddar cheese
•    12 slices bacon, thick cut applewood smoked
•    12 oz pulled pork, homemade, restaurant, or store bought is fine just make sure it is not sauced already
•    2 cups Carolina BBQ sauce
•    salt
•    pepper
•    southern style coleslaw to top

Carolina BBQ Sauce
•    1.25 cup apple cider vinegar
•    4/5 cup ketchup
•    1.5 tbsp creole or stone ground mustard
•    1.5 tbsp minced garlic
•    ½ tbsp crushed red pepper flake
•    ¼ tsp cayenne pepper
•    1.5 tbsp brown sugar, packed
•    Pinch salt
•    Pinch pepper
Mix together in a bowl and whisk thoroughly to combine.

Salt and pepper burgers on both sides and grill to desired doneness.  As the burgers near being done (~2 min before), place a slice of cheddar on each patty.  Top with 2 slices of bacon, 2oz of pulled pork, Carolina bbq sauce, and southern coleslaw and serve on a nice quality bun.
