Hazardous Weather Outlook

This hazardous weather outlook is for portions of central Illinois.  Day 1: This afternoon and tonight, showers and thunderstorms are expected today ahead of a cold front. Severe storms are not anticipated. Days 2-7: Tuesday through Sunday, for interests along the Illinois river, minor flooding is expected through most of the week from Havana to Beardstown. Thunderstorm chances will return by this weekend.

Ciabatta Grilled Cheese

2 slices Bake-at-Home Ciabatta

½ small head broccoli1 slice baby swiss cheese

¼ cup parmesan cheese, shredded

1 tbsp mayo

Juice of ¹⁄ lemon

olive oil

unsalted butter

salt and pepper to taste

Preheat oven to 400 degrees. Chop broccoli into small florets. Toss with a bit of olive oil, salt and pepper. Roast on a rimmed baking sheet for 15-20 minutes until soft and slightly charred. Set aside.Make the Lemon Black Pepper Mayo: Combine the mayo,lemon juice and a dash of black pepper in a bowl.Build your Grilled Cheese: Lay Ciabatta slices flat on cutting board. Spread both slices with Lemon Black Pepper Mayo. Top one slice generously with charred broccoli. Add baby swiss and cover with other slice of bread. Spread outside of sandwich with butter and press on parmesan. Flip it over and do the same to the other side. Heat a non-stick skillet over medium low flame. Add a touch of olive oil. When warm, carefully place parmesan crusted sandwich in the pan. Grill until cheese browns and begins to crisp. Flip over and do it again. Serve immediately.
