¹⁄ lb. turkey, sliced

½ butternut squash, peeled, seeded and cubed

¼ cup spinach

Gently mash in bowl and set aside.Make the Maple Mayo: Combine mayo and maple syrup in a bowl until well blended. Build your Grilled Cheese: Lay Tuscan slices flat on cutting board. Spread both slices with Maple Mayo. On one slice layer turkey, spinach and mild cheddar and cover with remaining bread. Heat a sandwich press, or a non-stick skillet over medium low flame. Grill sandwich in a bit of olive oil until bread crisps and browns and cheese begins to melt. Drizzle oil on top of sandwich and carefully turn it over to grill the other side. Serve immediately.
