Tuscan Grilled Cheese

2 slices Bake-at-Home Tuscan

¹⁄ lb. turkey, sliced

½ butternut squash, peeled, seeded and cubed

2 slices mild cheddar cheese

¼ cup spinach

1 tbsp mayo

1 tsp maple syrupolive oilsalt and pepper

Preheat oven to 375 degrees. Toss cubed butternut squash with olive oil, salt and pepper. Place in single layer on rimmed baking sheet and roast until slightly brown and soft, about an hour. Gently mash in bowl and set aside.Make the Maple Mayo: Combine mayo and maple syrup in a bowl until well blended. Build your Grilled Cheese: Lay Tuscan slices flat on cutting board. Spread both slices with Maple Mayo. On one slice layer turkey, spinach and mild cheddar and cover with remaining bread. Heat a sandwich press, or a non-stick skillet over medium low flame. Grill sandwich in a bit of olive oil until bread crisps and browns and cheese begins to melt. Drizzle oil on top of sandwich and carefully turn it over to grill the other side. Serve immediately.
