Summer Shrimp Tacos

Summer Shrimp Tacos



Yield: 6 servings






2 each limes



1 each lemon



1 each orange



1/2 bunch fresh
cilantro, chopped



2 cloves garlic,
minced



1 each avocado,
diced



1 each medium
tomato, diced



¼ cup onion,
diced



1 pound shrimp



12 (6in) flour
tortillas



1 cup sour
cream



2 Tbsp lime
juice



 



1.      
Zest and then juice all of the citrus into a
bowl.  Add half of the chopped cilantro
and the garlic.



2.      
Peel and devein the shrimp. 



3.      
Marinate the shrimp in the citrus for around 15
minutes (do not leave3 in the marinade for longer than 30 minutes).



4.      
Saute the shrimp in a pan until completely
cooked about 3 minutes.



5.      
Mix the sour cream with 2 tablespoons of lime
juice.



6.      
Warm the flour tortillas and top with the
shrimp, avocado, and tomato. Top with the sour cream and remaining cilantro.
