Pulled Pork Tacos

Pulled Pork
6 lb. to 8 lb. Pork  Shoulder
1 tsp. garlic powder
1tsp. salt
1tsp. black pepper
2 White Onions
1 Stalk of Celery
1 Carrot

Cover with foil
Cook at 350 degrees for 6 hours

Corn Relish
1 cup fresh sweet corn
2 small dice Bell peppers
½ Small Dice Red Onion
1 cup vinegar
1 cup sugar

Mix all ingredients together and bring up to simmer and let cool.

Pickled Red Onions
4 Medium Red Onions
½ cup pickling spice
1 cup sugar
1 cup vinegar

Mix all ingredients together and bring up to simmer and let cool.

Assemble by using your favorite tortilla whether it be corn or flour and grill on each side for about a minute.  Layer the meat on first followed by the relish and pickled onions topped with your favorite bbq sauce!
