Cajun Coconut SPAM Fritters

Ingredients:
Cajun Coconut SPAM Fritters
Oil for frying
1 (12 ounce) can SPAM Lite
1 1/2 cups complete pancake mix
2 teaspoons Cajun seasoning
2/3 to 3/4 cup milk
1 1/2 cups coconut
1/4 cup sweet and sour sauce
2 tablespoons ketchup

Directions:
1.    Heat oil to 400 degrees F.
2.    Cut SPAM into 4 equal square parts, cutting in half horizontally and vertically. Slice each part into 8 spears. Place wooden tooth pick into each spear, length-wise.
3.    Combine the pancake mix and seasoning. Add milk gradually to get right consistency, thick enough for batter to stick to SPAM.
4.    Dip spear into the batter and then coat with coconut.
5.    Fry in hot oil for 1 1/2 to 2 minutes, or until golden brown.
6.    Drain on a paper towel and transfer to pan and place in 275 degree oven to keep warm until serving.
7.    Serve warm with sweet and sour sauce mixed with ketchup for dipping, if desired.

Yields: 32 spears or 4 to 6 servings.
