Peach Consomme

1000 g peaches peeled, cored and sliced
1 liter filtered water
200 g sugar (sifted)
1 Vanilla bean split lengthwise

Peel, core and slice the peaches.

Bring the water, sugar and vanilla bean to a simmer until the sugar is dissolved.

Add the peaches bring to a boil simmer for 10 minutes. Remove from heat and let stand for 10 minutes. Strain through a coffee filter and chill.

Garnish: Use Red wine Poached Peaches, Frozen Vanilla Greek Yogurt and fresh herbs from the garden to finish this dish.

Red wine Poached Peaches:
Peel and slice 2 Peaches in 1/4 inch by 1/4 inch squares. Bring 1 Liter of a red wine of your choice to a boil and cook for a few minutes. Remove from heat and drop the peaches in. Let them poach for 15 minutes then remove and chill.
