Ham, Egg and Cheese Breakfast Cupcakes

Serves: 12 servings

8 eggs
1/2  cup milk
1 cup diced ham
1 cup grated cheddar cheese
1/4 cup diced peppers (optional)
1/4 cup diced scallions (optional)
1 cup chopped fresh spinach (optional)

Heat oven to 350 degrees (325 for dark nonstick pan)

Mix eggs in large bowl. Add milk, cheese, peppers, spinach and mix well.

Pour into prepared cupcake pan (either with cupcake liners or lightly grease pan).

Bake for 20- 30 minutes, or until eggs are firm.
